Answer (1 of 5): if you add salt to water it raises the boiling point, which slows down the rate of evaporation. the difference however is small. sugar can also have.

Both substances will raise the temperature at witch water boils. nacl will have a large impact per pound as it is ionic in nature and dissociates (splits up) to form.
To prevent drying for some other reasons. if sugar, salt or other chemicals are able to affect the evaporation of water, we can use them to brigade smoking.
